12/02 CHICAGO: Oh, the Food!

I'm the first to admit starting out, I didn't really know what to expect with regard to Chicago food. But my education was delightful: these folks can really cook.

You can't really say you've experienced a place without sampling some of its signature dishes. One of Chicago's classics is deep dish stuffed pizza, and locals told me the place to go was Giordano's.

The lunch special featured an individual size spinach stuffed pizza that took a good 40 minutes to bake into a gooey, flaky perfection (fortunately the waitress warned us beforehand, so we didn't get anxious about the wait).

When it finally arrived, it did not disappoint. The sauce had a hint of red wine, the mozzarella was satisfyingly stringy, the spinach fresh and the ricotta creamy and rich.

So filling I could only finish half, it provided more than enough energy to fuel the rest of the day's sightseeing.
